Bacon Bbq Chicken Sliders
Ingredients:
- 1 package (12 count) Hawaiian dinner rolls
- 3 cups cooked chicken, shredded
- 1 1/2 cups BBQ sauce
- 8 strips bacon, cooked and halved
- 1 cup shredded fiesta blend cheese
- 2 tablespoons butter, melted
- 2 teaspoons BBQ seasoning
Instructions:
1. Prep the Oven: Preheat your oven to 350°F. Line a baking sheet with parchment paper or lightly grease it.
2. Slice the Rolls: Remove Hawaiian rolls from package, keeping them connected. Using a sharp serrated knife, carefully slice the entire block of rolls in half horizontally to create one large top piece and one large bottom piece. Set aside.
3. Make BBQ Chicken: In a large bowl, combine shredded chicken with BBQ sauce, stirring until the chicken is well coated and saucy. Taste and add more BBQ sauce if you like it extra saucy.
4. Assemble the Sliders: Place the bottom half of the rolls on your prepared baking sheet. Spread the BBQ chicken mixture evenly across the surface. Layer the bacon pieces over the chicken, then sprinkle the shredded cheese evenly on top.
5. Add Top and Season: Place the top half of the rolls over the cheese layer. Brush the tops with melted butter and sprinkle BBQ seasoning evenly over the surface for extra flavor and color.
6. Bake Until Golden: Bake in the preheated oven for 15-20 minutes, until the cheese is completely melted and the tops are golden brown. The rolls should be heated through and slightly crispy on top.
7. Slice and Serve: Remove from oven and let cool for 2-3 minutes. Using a sharp knife, cut along the original roll lines to separate into individual sliders. Serve warm and enjoy!
Easy Jalapeno Popper Grilled Cheese
Ingredients:
- 6 strips bacon
- 6 tbsp garlic and herb cream cheese, softened
- 2 oz sharp cheddar cheese, freshly grated
- 2 oz Monterey Jack cheese, freshly grated
- 2-4 tbsp pickled jalapeños, finely chopped
- ½ tsp cumin (optional)
- 4 slices sourdough bread
- 1-2 tbsp butter
- 2 tbsp freshly grated Parmesan cheese (optional)
Instructions:
1. Cook the Crispy Bacon: Place the bacon strips in a single layer in a nonstick skillet over medium heat. Cook until perfectly crispy, flipping as needed, about 6-8 minutes. Transfer to a paper towel-lined plate to drain and cool.
2. Make the Amazing Filling: In a small bowl, mix together the softened cream cheese, grated cheddar, Monterey Jack, chopped jalapeños, and cumin if using. Once the bacon has cooled enough to handle, chop it into small pieces and fold it into the cheese mixture. This is what makes it taste like jalapeño poppers!
3. Prep the Sandwiches: Butter one side of each bread slice and place them butter-side down on a plate. Generously spread the jalapeño popper filling on two slices, then top with the remaining slices to make 2 sandwiches, with the buttered sides facing out.
4. Get Ready to Grill: Carefully drain the bacon fat from your skillet and wipe it clean with a dry paper towel. Heat the skillet over medium heat - you want it hot but not smoking.
5. Toast to Golden Perfection: If using Parmesan, sprinkle it on top of the sandwiches, then place them in the hot skillet Parmesan-side down. Sprinkle more Parmesan on the tops. Cook uncovered until golden brown and crispy, about 3-4 minutes per side.
6. Flip and Finish: Carefully flip the sandwiches and cook until the second side is golden brown and the cheese inside is completely melted. The Parmesan creates an extra crispy, flavorful crust.
7. Serve Hot: Remove from heat and let cool for just a minute or two - you don't want to burn your tongue on that molten cheese! Use a serrated knife to slice and serve immediately while the cheese is still stretchy and delicious.
Meat Lovers Pizza Bread
Ingredients:
- 1/2 lb lean ground beef
- 1/2 teaspoon + 1/8 teaspoon dried oregano, divided
- 1/4 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1 jar pizza sauce, divided
- 1 tube (13.8 oz) refrigerated pizza dough
- 4 slices provolone cheese
- 2 oz thin-sliced pepperoni (about 1/3 cup)
- 1 cup shredded mozzarella cheese
- 2 tablespoons butter, melted
- 2 tablespoons grated Parmesan cheese
Instructions:
1. Prep Oven and Cook Beef: Preheat oven to 400°F. In a large non-stick skillet, cook ground beef with 1/2 teaspoon oregano, garlic powder, and kosher salt until browned, stirring frequently to break up the meat. Drain any excess fat.
2. Season the Meat: Let the cooked beef cool slightly, then stir in 1/3 cup of pizza sauce. Mix well and set aside.
3. Prepare Pizza Dough: Unroll the pizza dough onto a baking sheet with shallow sides. Gently stretch the dough if needed to form a rectangle.
4. Add Base Layer: Spread 1/2 cup pizza sauce down the center of the dough in a strip, leaving plenty of dough on both sides for braiding.
5. Layer the Fillings: Over the sauce, layer the provolone cheese slices, pepperoni, seasoned ground beef mixture, and finally the shredded mozzarella cheese.
6. Create Braided Effect: Using a sharp knife, cut 1-inch wide strips down both sides of the dough toward the filling, leaving the filling area intact. Alternately bring strips from each side up and over the filling to create a braided appearance.
7. Add Final Toppings: Brush the braided dough with melted butter, then sprinkle with grated Parmesan cheese and the remaining 1/8 teaspoon oregano.
8. Bake Until Golden: Bake for 20-25 minutes until the dough is golden brown and baked through. Meanwhile, heat the remaining pizza sauce for dipping.
9. Serve with Sauce: Let cool for 5 minutes before slicing. Serve warm with the heated pizza sauce as a dipping sauce.
