Another Great Bite: goat cheese and roasted red pepper ravioli with arugula pesto and a lemon emulsion. The ravioli is thin enough to see the filling.

One Great Bite: labneh (spiced yogurt) with beets and paper-thin flatbread. Light but delicious and very 'more-ish' as the British say. (Even though this is a Middle Eastern dish. And I'm in Southern France.)
One Great Bite - Betty's Yorkshire Gingerbread is unlike America's cake-like gingerbread but more like a delicious, gingery cookie with a crumble topping. Very 'moreish' as the British say.
One Great Bite: pickled clams with seared scallops. It's 'only' a garnish, but the pickling of the clams is the perfect foil to the sweetness of the scallops. At Dromoland Castle Hotel.
