Pan fried scallops with bacon, peas and butter sauce with amazing Ribeiro, Adega Sameirás, smells honeyed but is very acidic - it cuts through the butter. It’s the green elements that are challenging - can taste metallic. Yummy! @RathfinnyEstate #RathfinnyAND @LeCordonBleuLDN

The dominant flavour won’t always be your main protein ingredient. It comes from whether it’s grilled, pan fried or steamed, from an acid sauce or a mustard. Hence a steak with chimichirri @eorks well with a white wine #RathfinnyAND @RathfinnyEstate @LeCordonBleuLDN

Walnut blinis, smoked haddock and a grain mustard cream with a delicious 5 year aged Champagne, Jean Paul Deville - the saltiness of the haddock and the acid of the wine becomes softer, the bitterness of walnuts more pronounced and the blini smoother. Who knew?! @RathfinnyEstate
