This week, 55 students attended a masterclass at Institut Bocuse in Lyon, where they learnt to cut #ScottishSalmon with Jean-Luc Viany, one of the country’s top fishmongers.

This concludes a year of exciting activity celebrating 30 years of Label Rouge Scottish salmon in France.
