The thing about this is that you cannot isolate the gameplay from how the story is told. It's a video game, the gameplay is the vehicle that the story is told with. When the big narrative climaxes, the boss fights, are extremely easy, it does make the story less impactful.
I find it funny when people say "We aren't going to fight Gaster because he's a meta entity outside of the world" as if there isn't another meta entity like that

Half of the appeal of the player-MC dynamic exploration is that Kris is separate from us and opposes us (therefore making them an antagonist), while also serving as our means of interacting with the world (therefore making them a protagonist as well)
