Part one:
Pangratto is an alternative to Parmesan cheese. After the 2nd war in Southern Italy Parmesan was hard to come by. So they would use any and every bit of leftovers they could. Bread, garlic, and herbs were mixed to make this amazing crunchy alternative. Translated as ‘poor man’s Parmesan’

Double Garlic Marinara
Italian food is about the absolute best ingredients done with care and simplicity. That’s what this is. San Marzarno tomatoes, fresh garlic, Italian olives, fresh oregano and a little sea salt and olive oil. I do a 6 hour cook on this to bring the natural sugars out of the tomatoes.
