It’s not that strawberries have no scent.
Apparently, the fragrance we smell in strawberry milk or candy is closer to an “idealized strawberry”—the key aromas of real strawberries amplified to be sweeter and creamier.
Red fruit, sugar, and peach-like lactones overlap into something strangely skin-like and sensual… so maybe there was a reason I found it subtly arousing. 🍓
Strawberries certainly do have a smell - one which gets stronger as they ripen. However, it’s not possible to extract a strawberry essential oil due to their high water content, so the strawberry scent in products is often a synthetic approximation of the natural smell.
