If you have a friend who thinks it's fine to eat french fries once a week because they are "healthy" the rest of the time,
Send this to them.
Here are 5 reasons you should NEVER eat fries from a fast food restaurant again:
1. Similar to smoking 25 cigarettes
One study done collected samples of french fries from fast food restaurants and measured the toxin levels.
Ultimately, they found that the reheating of potatoes and vegetable oils leads to an accumulation of these carcinogenic toxins.
Particularly, one large serving of these french fries contains the equivalent amount of aldehyde content as 25 cigarettes.
Additionally, they showed that acrolein, which is one of the most harmful chemicals found in cigarette smoke, is also found in high levels in these french fries.
The WHO states that the maximum daily intake of acrolein should be around 525 micrograms. The study found that many global chain fast food restaurants had french fries containing 1-1.5 milligrams of acrolein, which is 1,000-1,500 micrograms, almost 3x the acceptable amount.
2. It could permanently damage adolescents' brains
A new study reviewed the effects of reheated sesame and mustard seed oil on the first generation of offspring of rats. The reheated oils were used to mimic deep-fried oils often used to cook foods like french fries at fast food restaurants.
These oils lose their antioxidant value and accumulate peroxides, acrylamides, trans fats, and polycyclic aromatic hydrocarbons.
The study found that the reheated fries caused liver and colon damage in the rats, leading to dysfunctional lipid metabolism.
Ultimately, the amount of DHA (an important omega-3 fatty acid) that the brain needs was significantly reduced, visible through the neurodegeneration found in the female rats' brains and their offspring. French fries are frying our brains.
3. High levels of acrylamide
Acrylamide levels have been found to be much higher in french fries and potato chips compared to other foods.
Acrylamide has been acknowledged by the IARC as a probable carcinogen and has been found to cause cancer in laboratory studies on animals.
One of acrylamide’s metabolites, glycidamide, has been found to form DNA adducts and disrupt nerve function and structure progressively with continued exposure.
It is through the adduct formation of the acrylamide metabolite that leads to neurotoxicity.
Acrylamide can pass the blood-brain barrier, allowing the disruption of our nervous system. It also creates oxidative stress, lipid peroxidation, and inflammation.
While more studies are needed with appropriate amounts of acrylamide being given to animals (closer to food-borne exposure), one 5-microgram acrylamide treatment done on rats led to increased expression of inflammatory genes.
It is important to note that while a human may not consume 5 milligrams of acrylamide in one sitting like in some of the animal studies, they do within the span of 2 months if they consume fast food french fries once a week. Just something to keep in mind.
4. Increased risk of anxiety
One study critically examined the correlation between high fried food consumption and increased risk for anxiety and depression, attributing these effects to toxic compounds such as acrylamides present in fried foods.
The study emphasized that chronic exposure to these foods can lead to neurotoxicity and dysregulated lipid metabolism, which are significant factors in the development of anxiety and depression.
However, most people believe the only risk they are facing from consuming fried foods like french fries is a little weight gain and acne.
But the impact goes much deeper. Because our body is one functional unit, if you offset your cells, the rest of the body will feel the effects.
5. Damage to multiple organs in the body
Many fast food restaurants use the same oil to fry foods for an entire day, or even as long as a week.
When these oils (particularly seed oils) are continuously reheated, the polyunsaturated fatty acids become oxidized and can form harmful compounds such as polycyclic aromatic hydrocarbons and peroxides.
These can generate a lot of reactive oxygen species (ROS) in the body.
When we have more ROS accumulated than antioxidants in the body, it can lead to oxidative stress, which is a hallmark of cancer, can damage cells (DNA, mitochondria, etc.), and ultimately organs.

Microplastics in your testicles?
This is how to reduce your exposure (do what's possible for you, don't let perfect be the enemy of good):
-Reverse osmosis filtered water + remineralization. Stop drinking from plastic bottles or cans lined with plastic (most don't realize cans are lined with plastic). (PMID: 35564678)
-Plastic cutting board-> Wood. Easy switch. Huge reduction. (PMID: 37220346)
-Remove carpet/polyester furniture which increase microplastics in the dust in your home. (PMID: 31756678)
-Rinse dishes before you eat off of them-minimize home dust ingestion, see above.
-Indoor air filter (see above)/ Open windows as much as possible. HEPA air filters should remove most indoor microplastics.
-Limit seafood (PMID: 30116998). This one will be controversial, but between PFAs, microplastics, and heavy metals do you really still think a pescatarian diet is ideal?
- Grass fed beef over grain fed beef. The latter will contain more microplastics due to plastics (garbage) added to feed. (PMID: 38159628)
- Natural clothing (Cotton, wool vs polyester), will also reduce PFA exposure. Wearing and washing polyester clothing releases microplastics into wastewater and home environment. (PMID: 32101431)
-Cotton bed linens vs polyester. Do you really want to breathe plastics particles all night?
-Eliminate seed oils. Yes, microplastics found in these and getting them out of your diet will have many health benefits. (PMID: 38295567)
-Minimize processed food consumption, especially those in plastic containers (or vacuum sealed plastic) for long amounts of time.
-Minimize meat in plastic. Nothing is perfect here but getting meat freshly packed from a local butcher in wax paper seems ideal if you can.
-Move to the middle of the Amazon, make a loincloth out of animal skin, live in an open air hut, hunt wild game and pick fruit off trees, drink exclusively from a Tapir bladder.*
*This one is a joke. Or is it?
Obviously it's IMPOSSIBLE in 2024 to completely avoid microplastics, but taking steps to minimizing your exposure seems like a good idea.

I’d advise people to boil water before drinking it or drink bottled and be cautious when brushing teeth/showering with tap water for the foreseeable.
