@hughcards @rorysutherland In poorer locations in the past, the 'lamb' (mutton?) that was eaten was allowed to grow to about 30kg. The chops were then chopped in the normal manner but then split again, long ways, down the middle of the bone. It was a "povert-hack" to stretch limited resources.

@hughcards @rorysutherland I consulted with my local highly acclaimed craft butcher about this very topic.. As a child I ate little thin 'lamb' chops. I have been unable to source them since, except in very poor locations. Prosperous areas consume lamb that has grown to less than 20kg. PTO> +
