(part 2) not that I have tasted enough new make in Oz to know any differently, but it seems that the variety of stills is such a big deal in Scotland, so maybe it's... a big deal here too?
Independent bottlings seem a bit of a gamble (to me). Anyone with the money can buy a 15 y.o cask from Glen Twenty distillery and bottle it, I think? So in developing the final product, what separates the esteemed labels (or bottlings) from the... fizzlers?
I was just reading about the #octomore 10.2, which has been finished in third fill Sauternes casks. It sounds wierd (or not) but also I am intrigued. Is there any way to find this in Oz without leaving the country via a Duty Free outlet?

Hello #whisky world. I have more questions... Given a spirit's rapid maturation in oak in an Aussie climate, is there any benefit to partial maturation in an inert vessel? Kind of like some wine is aged in steel tanks. Are there parallels with inactive casks?
@seriousabtplay It's useful to break it down like that. Thanks! I would have thought that the Australian climate still has a pretty big part to play when it comes to temperature and humidity during maturation tho, too.. angels share and those related factors.
