可口可乐的pH值约为2.5，和胃酸的酸度差不多。当你把烤花生丢进去时，里面的磷酸会部分破坏花生表面的蛋白质，释放出游离的谷氨酸。你就是在杯子里实时制造鲜味（umami）。

花生表面的盐会抑制舌头上的苦味受体，从而大幅提升你对甜味的感知，却不需要额外加一克糖。可乐本身一罐已经有39克糖，但因为盐清除了其他干扰的风味信号，你的大脑会觉得它比实际更甜。

碳酸化则起到两个关键作用：首先，溶解在液体中的CO₂会形成碳酸，刺激TRPA1痛觉受体（而非味觉受体）。这种轻微的刺痛感会不断重置你的味觉，让你每喝一口都像第一口那样新鲜，不会产生味觉疲劳。其次，气泡会不断搅动花生表面，加速蛋白质分解和谷氨酸的释放。花生泡得越久，释放出的鲜味就越浓。

最后是脂肪的加持。花生脂肪含量高达49%。脂肪是唯一能激活CD36受体的宏量营养素，大脑会将其解读为“丰盈”和“满足”。当糖、盐、酸、鲜味、碳酸再加上脂肪同时出现时，你就无意中同时触发了人类味觉系统中几乎所有主要的奖励通路。

20世纪20年代的佐治亚州农民这么做，原本只是为了干活时能空出一只手。他们在无意中踩中了“盐-酸-鲜-脂-碳酸”的完美循环，而当时距离食品科学能解释这一切，还整整早了一个世纪。
