Convoluted solution to disable Copilot on Mac.

If lucky you'll go to preferences and Copilot will be there to disable. If unlucky it won't be and you need to go to Privacy then Managed Experiences then untick all of that. Then sign out of Word. Then restart it … Copilot is off.

Recently updated Microsoft Word on the Mac and the 'Draft with Copilot' feature I previously disabled is back and apparently much harder to disable this time around. Why are they forcing this BS on us? Anyone who knows how to turn it off, please let me know.
