"Each coffee has an inspired playlist that pairs with it," says Tio Fallen, MSE'07, who is combining engineering, music, and passion for roasting to make the perfect cup of coffee in downtown Houston. Tio and his wife, Kenzel Fallen, founded @ThreeKeysCoffee, which sells coffee beans and blends at retailers across the U.S. and has a cafe in Finn Hall in Houston. The duo started the business in 2019 and opened their stall in 2023. For the first few years, they were strictly roasting for retail, small businesses that carry their coffee, and their online store. "We built our following, our customers base, through the actual crafting and creating of coffee," Tio says. Tio's engineering degree from U-M helps him create the roasts that earned Three Keys Coffee the title of Best Coffee Roaster in Texas by Food and Wine. "I like to think about coffee roasting, in particular, as a combination of art and science," he says. Tio found U-M through the Summer Research Opportunity Program during his junior year of undergrad. He loved being on campus and pursued his master's in mechanical engineering in Ann Arbor. "It was a great, great experience. I love the University. Even though I didn't go for undergrad, that grad experience was very special and opened so many opportunities and pathways for me," he says. "That's why, with the shop, there's little homages to the Maize and Blue." Behind the counter, there's a winged football helmet, a U-M football book on display, and Three Keys Coffee merch in maize and blue. Plus, visitors can get a cinnamon Block M on their drink. "I put that helmet up specifically for this weekend as well as the Michigan football book. But everything else has been incorporated into our branding since day one."
