Tonight’s dinner was unbelievably DELICIOUS! Homemade Mole Poblano with Spanish Rice and cheesy refried beans! And for the beverage, the Gulp Of Mexico (Dos XX Beer with lime and a salted rim. Thank God there are plenty of left overs to enjoy again!

Tonight’s dinner was a new dish I never made before. Teriyaki Tuna Steaks with a Warm Brussels Sprout Salad with Bacon, Shallots, Dried Cranberries and home made dressing Mustard Vinaigrette Dressing.

In Mexico, today is Día De Los Muertos for pets. In honor of my Sir, Loin “I love you my baby. I miss you so so much. I can’t wait for the day I see you again.” 😢
