Beware of Big Food’s new trick: engineer processed starches to count as “fiber,” subtract them from total carbs, call the product “2 net carbs,” qualify for “Keto Certified” labels, then slap unregulated marketing claims like “GLP-1 Friendly” on the front.
Today I learned things about sourdough I should have known a month ago. I’ve changed up some things & now my starter is different & I AM SO FUCKING EXCITED! For this new adventure I thought I was already on 🤣🤣
Dear Me,
Look at you.
A year ago, you probably never imagined you’d be learning how to bake sourdough from scratch, planning a house on your own land, juggling business paperwork, helping take care of your mom, and still trying to hold yourself together through all of it. But here you are — figuring things out one messy, exhausting, beautiful step at a time.
You care deeply. Sometimes too deeply. You pour yourself into people, projects, fixing problems, making things better, making things feel warm and comforting for everyone around you. Whether it’s homemade bread in the kitchen, building something for your future, or staying up worrying about things nobody else even notices — your heart is in everything you do.
And even though you joke through stress and say “shit” when things go wrong and panic when dough doesn’t look right or life feels uncertain… you always keep trying. That says so much about you.
You are building a life with your own hands. Literally.
There will be days when you feel behind, overwhelmed, emotional, frustrated, or unsure if you’re doing enough. But the truth is, you are already becoming the woman you’ve been trying so hard to grow into: capable, resilient, creative, nurturing, and strong as hell.
I hope one day you slow down long enough to realize how much beauty you create around you. Cozy kitchens. Homemade things. Future plans. Comfort for other people. You make ordinary moments feel safe and alive.
And I hope you stop doubting yourself every time something is unfamiliar. You always figure it out eventually. Every single time.
Your future home will stand because you kept pushing forward.
Your recipes will improve because you kept practicing.
Your business will grow because you care.
Your life will soften because you refused to give up on yourself.
You don’t need to have everything perfectly together right now. You’re still becoming.
And honestly?
The version of you that’s coming is going to be proud of the version writing this letter.
Love,
Me
