Is one more processed than the other?
We have two kinds of kitchens.
One has hundreds of scientific breakthroughs. The other cooks those breakthroughs into a delicious meal.
Same obsession. Different tools. One goal: the best chicken you've ever eaten.
New category of food. New standard of cooking. UPSIDE chicken en croûte has the same rich flavor of classical French cuisine, now with the satisfying taste of progress.
In a curry, the sauce is everything. But low quality meat disappears in it.
We spent years building chicken that doesn't: texture that holds, flavor that stays present through every layer of spice.
We love a great sauce. We made chicken that deserves to be in one.
Pan-fried, deep-fried, chicken-pot-pie’d. We mapped 120 flavor attributes to rebuild chicken from scratch. Now you can taste exactly what that means: chicken without compromise. How do you describe the taste of chicken?
Ten years ago, @UmaValeti shared a vision with @BruceGFriedrich: cultivated meat as a real protein alternative.
We've come full circle. Honored to host @GoodFoodInst to celebrate Bruce's new book Meat, and a decade of making that vision real. 🌱
Priya makes chicken stir fry for her friend Dom. He loves it.
Halfway through she mentions it's cultivated chicken.
Dom puts his fork down.
No dietary restrictions. No religious objections. No safety concerns.
Was Priya wrong?
Things started building in 2016 and never stopped.

@LAE1983m We agree about factory grown chicken. Does it change things to know that the cultivated chicken isn't 3D printed? It has the same texture and flavor as conventional chicken.
Two pots of chicken soup are on the stove. You taste both & notice no difference.
The chicken in one pot is from factory farm bird, like 99% of the chickens in America. The other was grown from real chicken cells in a clean, controlled environment.
Is one pot better?
UPSIDE chicken is grown in a clean and controlled environment, reducing the risk of disease.
✅ Saves chickens
