I made Japanese curry with tofu katsu and it was BOMB. I added potatoes and vegan cheese to the curry. Mildly spicy, really hit the spot.

• Mediterranean salad with farro and tofu ricotta.
• Bean soup with homemade stock! I always keep veggie scraps until I fill a 1 gallon freezer bag then I make soup.

Remember how I bought way too many strawberries? Well!! I fixed that problem today.

Made jam for the first time in my life, gonna be stored in the fridge because I dont do any jarring. Then I utilized the tops to make a simple syrup.

Just had the most interesting visit to the mall. First, we saw a father strap his child into a VR racing seat situated in the middle of the mall (think where kiosks go) and walk away. Then we saw someone walking a cat on a leash. We saw them several times while we were there.
