Well, I'm happy to say you're a victim of quality. British cheese has improved so much in recent years. Hard cheese, especially aged cheese, has less moisture in and contains calcium crystals which is a sign of quality. They aren't good cheeses to melt due to low moisture levels.
If you want to melt cheese, NEVER but pre-grated cheese as it contains potato starch to stop it from clumping. Pre grating your own cheese helps it melt as it massively increases the surface area. Mild, young cheddar, melts very well. Take the cheese out of the fridge half hour before you melt it as melting from the fridge increases the amount of fat separation.
If you love the flavour of a mature or vintage cheddar but want to meltiness of something softer, grate it and mix it with a softer cheese. That would work.
Alternative, turn to other cheeses such as gruyere. It's one of the world's best meters, it's semi-hard, nutty alpine cheese. Full of flavour and melts so well they use it in raclette/cheese fondue.
Start the temperature low and increase it once it has started to heat as quick and high heat can cause the proteins to curl which can cause a bitter taste.

@ConstableChaos Maybe I’ll try that. It’s always been naturally thinned out to the height of a Labradors reach when on her back legs. As she’s no longer here to pick her own fruit and veg it’s gone even more wild this year.

@remmy_308@HedgehogCabin Not wrong there Remmy, first thing I do every day is watch the footage of my night visitors. Saturday is the only night I can sit out late enough to watch them. I wish I had a house for them to live in the garden.
