Today year 10 made Fish au Gratin. They learnt to poach fish, make a roux sauce (flavoured with bay leaves from the quad and cheese) and topped it with cheese and breadcrumbs. Our vegan student did Mac & Cheese using dairy free alternatives

We helped Jamie Oliver today with his attempt to beat the Guinness World Record for the biggest ever cookery class!

Year 9 made seasonal fruit tarts today. They made their own sweet shortcrust pastry, baked it blind and then filled them with fruit. Great work 9C

Chicken Masterclass with year 10. They learnt the high level knife skills needed to portion a chicken. The drumsticks, thighs & wings were marinated in barbecue sauce & roasted. The breast was butterflied, stuffed and wrapped in pancetta to create Chicken Ballotine

Year 10 learnt the basic principles of Preserves by making Berry Jams (using seasonal fruits) or Lemon Curd. One group had time to bake scones too.

The first Year 8 class made their ‘Chef’s Special’ this week. They adapted an Italian Tomato Ragu and added extra ingredients to add flavour and colour. Well done 8H, your dishes looked great!
