@MicahTischler I cooked the onions and peppers down quite a bit, not totally caramelized. The pepper didn't add much to the dish but I had one I needed to use up.
Okay I really need to go to the grocery store. This is what I came up with using the ingredients on hand. It is bratwurst and gnocchi with onions and bell peppers in a garlicky bechamel sauce.
I usually don't make dinner on Sunday nights, but sometimes I experiment. These are salami and cheese rolled up in pizza dough. I drizzled them in herby garlic butter.
I am not sure what to call this but it is dang good. It is celery, carrots, onions, bell pepper, garlic, navy beans, chicken stock and pulled pork. It is somewhere in between BBQ white chili and ham and beans.
I made fish and shrimp on sauteed spinach for lunch today. On a whim I seasoned the seafood with barbecue rub. The combo of sweet salty and spicy was delicious.
My wife was craving beef enchiladas. She gets what she wants. We had enchiladas, rice and beans on a Fiestaware plate just like a proper Tex-Mex restaurant.
