Emu Flat Filet https://t.co/Rh1dNPxwwQ. Literally greatest filet I’ve ever had. Highly recommend duck fat to pan sear it in, sea salt, fresh cracked black pepper. Monitor internal temp 130*F is perfect, then cover in aluminum foil and allow to rest for five or so minutes.

@AmarooHills I just wanted to thank Jay Winslow again for how he made my first experience with Amaroo Hills absolutely out of this world ! Hickory Smoked Emu jerky is my absolute favorite flavored jerky I’ve ever tasted and the fan and flat filets are utterly amazing!
