Experimented yesterday sugar free cream eggs used silicone cupcake moulds as egg moulds not arrived. Taste good but not perfect! Will have to make another batch 😃

Had a really busy day today but we wanted to keep with our weekly shopping theme. So here our mixed salad which includes our homemade sauerkraut and some leftover roast veg. Along with a tin of sardines in brine. Very simple but very delicious!!
Carrying on with our weekly shopping theme, last night’s tea was roast leeks, sprouts, carrots, mushrooms and feta cheese. Absolutely delicious! Also a good way to use up any bits of veg lurking in your fridge and cupboards!!
Following on from our previous post about our weekly shopping - Last night’s tea was roast chicken thighs, sprinkled with madras curry powder and ‘salt and pepper’ sautéed cabbage with onions, garlic, ginger and turmeric. All ready in 45 mins!

A lot of people have been asking if our lifestyle is expensive, food wise. Hope this answers some of those questions.
Leek, salmon and broccoli quiche with mixed salad. Low carb no grain pastry. Absolutely beautiful. The quiche freezes great so when you’re in a rush it’s a quick easy meal. Lunch or dinnner.
Cauliflower, broccoli and leek bake. Really easy to cook and surprisingly filling. Excellent for vegetarians and low carb as well.

Ok. I know it’s been snowing and it’s freezing cold but tonight’s was pork loin steaks, fried onions and a mixed salad. It was beautiful and strangely, very comforting on a winter’s day. Maybe its stews and casseroles in summer. 😂
Another unexpected long day so the pork had to be left in the fridge and out came that good old store cupboard ingredient , eggs. Lifesavers for us😋
So it was onion and mushroom frittata with some local cheese grated on top with loads of salad. So quick, easy and delicious.
Ok, it’s not very colourful, but it sure makes up in flavour.
This is chicken and cabbage stroganoff. Absolutely delicious and very filling as well. Low carb recipe that’s definitely going on the ‘keepers’ list!
Sunday night’s tea. Roast chicken and roast veg. Followed by vanilla baked cheese cake, a few raspberries, creme fraiche and drizzled with our ‘Notella’.
All low carb and the dessert was sugar free!

Spent all morning out in the freezing cold sorting out log stores out! So this afternoon’s treat were chocolate orange hazelnut fudge, plus mocha Brazil nuts fudge. Another experiment that went down especially well! Rest are in the freezer for a rainy day 🤣🤣🤣
