@kate_ball That sounds gross, but it is completely normal. As a cow is butchered into different cuts, there's lots of scraps trimmed off of the steaks, etc. All the bits of meat go into the grinder. It is unfeasible to keep scraps from each cow separate, and there 's no reason to.
