Assalamu alaikum brother regarding Mujahid's qaul its only secondary explanation which shouldn't contradict the primary. For Nabi (sa) it only means he is trustworthy over its correct meaning but the authentic report of Ibn Abbas is as follows:

قال: ثنـي معاوية بن صالـح، عن علـيّ بن أبـي طلـحة، عن ابن عبـاس، قوله: { وَمُهَيْـمِناً عَلَـيْهِ } قال: والـمهيـمن: الأمين، قال: القرآن أمين علـى كلّ كتاب قبله

Qur'an being the trustworthy criteria over all books shows it will decide what is true and what is false. This is the most authentic sanad to Ibn Abbas
