Agreed. But that's not the issue. First, people can sincerely die for false beliefs all the time. Martyrdom proves conviction, not truth.

Second, the historical evidence does not establish that all the apostles were given the choice to deny the resurrection or be executed. For most apostles, their martyrdom accounts come from later, uncorroborated traditions.

Before arguing about what they would or wouldn't have done, you first have to establish what actually happened. That's precisely where the historical evidence is weakest.
