@NathanaelB From a brief google... definitely leaves rot if below water line but can't find anything about stems. Key point is the freshness of the water.

@NathanaelB I've always thought this... and I figured the more water touching the stems, the quicker they start to go bad and rot. I have no scientific evidence for it though. But I always recut the stems on an angle and put just enough water in.
