Coffee is a labor of love. At the Selva Negra farm in Nicaragua where we source our Blue Heron espresso the green beans go through a final sorting for quality. Defects are removed by hand to insure that the final cup is clean and sweet.

Had a very nice visit with Gonzalo Castillo of Las Promesas De San Blas farm. He has won the Cup of Excellence 5 times. Today he looks at the future of other producers and uses his farm as a training center for other farmers. He has reduced water consumption by 75%.
