If AI is the JIT compiler from human intent to code, then SaaS is essentially the cached artifacts that are half way between the two. Seems still good to have some cache rather than JIT all the time.
One important criterion of startup hiring is high tolerance of chaos. It is hard to survive if you get burned out easily by unknown, complex, and nondeterministic things. Find the people who embrace this and even thrive in this.
