First of all Dodo is not just a normal payment gateway. It's MoR (Merchant of Record). They're the legal seller of your product in all countries.

If you're just starting use Dodo. And if you're established and have global customers, go with Stripe. But then you have to do manual tax filing in all countries you're selling.

Use Razorpay, if you're only selling in India. I don't recommend it for global sales.

Since stripe is not available in India any more... I'm using Dodo and Razorpay.
