the best is avoid night driving at all... and yes, need to refresh in between... sipping water while driving helps in a big way...
from what i have learnt in my driving across...

Few rules I follow:
- Avoid driving between 3Am and 4.30Am
- If I drive early morning, do so at 5.30 am and ensure atleast 6 hours of sleep the night before
- Stick to <2K RPM and 90 to 100 KMPH at max in highways. If it rains Max 70 KMPH
- One tea break at least every 3 hours
- If I feel tired, take a 30 mins nap and face wash before resuming the drive.
