I can report there is a parallel development underway in censoring new publications to remove all cultural notes and any indications of Uyghur uniqueness (and even depictions of mustaches!)

How can bright scholars like these go from being celebrated by the state, even supported with foreign travel to participate in Uyghur/Xinjiang studies events abroad, to becoming demonized for their specializations? Life in prison? For what?

@eleanorrbarnett @Dong_Muda I came to love a very similar fruit in Thailand, called lamut (sapodilla). When I sound mamey for the first time in a Philly Asian market I thought that's what they were (but giant!) I now know they are actually different things. But they do have similar tastes and textures!
Another farmers’ market inspired dish: Garlic tempered beef tongue (大蒜炝牛舌). This is an extremely delicious meat great for cold meat salad preparations and it’s especially nice topped with a garlicky umami-rich oily sauce as it is here, based on Laofangu’s recipe (YouTube)
This is kısır, a very popular summertime cracked bulgur wheat salad in Turkey. Steep some bulgur wheat in some boiling water and mix it with the fresh herbs, tomatoes, and cucumber. This one is made with farmers' market tomatoes, Kirby cucumbers, mint, parsley, scallions. #yum
A big bowl of loaded Guilin-style rice noodles (guilin mifen 桂林米粉) for Sunday’s breakfast. These were the large rice noodles topped with a 5 spice duck broth, baby bok choy, cilantro, fried soy nuts, pickled long beans, grilled beef, Chinese sausage, smoked bacon and eggs
@Dong_Muda I like huang jiu. I was surprised to find it is Chinatown last weekend marketed as a cooking wine. Unlike other US “cooking wines” this doesn’t have added salt, so it is even sippable. Not a fancy drink, but similar to a dry vermouth. Product of Chengdu
A Korean-styled steamed shishito peppers side dish, inspired both an abundance of farmers’ market shishitos from @everwildfarm and @maangchi ’s cooking channel. My recipe was based on Maangchi’s Kkwarigochu-jjim 꽈리고추찜. Umami-rich with dried anchovies in a sweet chile sauce.
Lay's is at it again with some unusual flavorings in China. This one is Jinshuang beer flavored (劲爽啤酒味). Not sure what this has to do with Mt. Tai—is this a beer inShandong province? In any case, I hope it is more delicious than the cherry blossom rice wine flavor #yum#food
