Pickled onion (or any vegetable) recipe:
Pickling Liquid:
1 cup white vinegar
1 cup water
2 tablespoons sugar
1 tablespoon salt
This is a great base and can be scaled up as needed. Bring these ingredients up to a boil until the salt and sugar has dissolved, then pour over the top of your vegetables in a mason jar. Let cool completely, then store in your fridge.
You can add all kinds of spices or aromatics; my favorites are:
Peppercorns
Garlic cloves
Bay leaves
Mustard seeds
Star anise
Fresh dill
I encourage you to experiment and see what you like best! You can do this with literally any vegetables, and is a great way to preserve them.
These will be good to eat in just a few hours, and can last in the fridge up to 6 months.
Ok, let’s do this again
Here is how you can make over 1,000g of protein (10 servings of each with 8oz of protein) for under $10 a day (cheaper than 1 bowl at chipotle)
What you’ll need:
Chuck chili:
-5 lb chuck (cubed) or stew meat (I prefer this because it's already cubed; one less step)
-2 cups beef broth
-2 14oz cans tomato sauce
-2 packets chili seasoning
Chicken soup:
-5 lb chicken breasts or thighs
-10 carrots
-1 yellow onion
-5 celery sticks
-4 cloves garlic
-1 bunch fresh dill
-2 bay leaves
-8-10 cups chicken bone broth
-Olive or avocado oil
-Optional: spinach or bok
-Optional: rice noodles
-Salt and pepper
Start by pre heating your oven to 325. Since both meals will be cooking at once, we are going to do the chicken soup in a crock pot/pressure cooker and the chuck in the oven. By doing this, it’s extremely passive; you don’t need to babysit it.
Start by prepping all of your ingredients. To make the cooking process more smooth, I always recommend doing ALL of the prep and organize before you turn the heat on.
So start by chopping your carrots, celery, onions, garlic, and dill (if you are using chuck instead of stew meat you can go ahead and dice that too) into bite sized pieces. This is the only prep you’ll need to do!
Since the chuck takes longer in the oven, we’ll start with that.
Add the bone broth, tomato sauce, chili seasoning over medium high heat and bring to a simmer, mixing well.
Once it’s starting to bubble add your chuck. Place in the oven and cook for around 3 hours (or until the meat is fork tender).
Yes, you can elevate this dish a little bit (I was just going for speed)
Optional step: sear your meat first, then add chopped onions and garlic, THEN add the broth/tomato sauce/chili seasoning/chuck.
I like to serve this in a bowl with rice, white onion and cilantro, but you can also do a taco!
Total: about $5–5.75 per serving
5 lb stew meat or cubed chuck: about $43–47 (stew meat averaged $8.59/lb in August 2026; chuck runs a bit higher)
2 cups beef broth: about $1.50–2.50
2 cans tomato sauce: about $2–3
2 chili seasoning packets: about $2–3
Batch total is roughly $49–56, or about $5–5.75 per meal. Stew meat already cubed keeps the cost at the lower end of that range.
Next is the chicken soup:
In a large pot/crock pot/pressure cooker on the saute setting (or stovetop) over medium heat, add a dash of oil and your carrots, onions, celery and a pinch of salt. Saute for 5 minutes or so.
Add the garlic and bay leaves, and toast for 1 minute.
Add the chicken bone broth, mix well and bring to a simmer.
Once it’s simmering add your chicken, and simmer away until your chicken easily shreds (around 30-40 minutes on the stove, 2-3 hours in a crock pot, 15 minutes in a pressure cooker ).
Remove all of the chicken, shred it up, and add back to the soup. Add your fresh dill, taste for salt and you are done!
If you are adding spinach or bok choy you can add this in the last couple minutes.
I like to serve this with rice pasta.
Total: about $3–4.25 per serving
5 lb chicken breasts: about $20–21 (boneless breast averaged about $4.17/lb). Thighs are often $2–3/lb, which drops the meat cost to about $10–15 and the per-meal cost closer to $2–3
8–10 cups chicken bone broth: about $6–10 (two to three 32 oz cartons)
10 carrots, 1 onion, 5 celery sticks, garlic, dill, bay leaves, oil, salt and pepper: about $6–8
Optional spinach or bok choy: about $2–3 for the batch
Optional rice noodles: about $2–3 for the batch
Base batch without the optional add-ins is roughly $32–39 with breasts, or about $3.20–3.90 per meal. With thighs it is closer to $2.50–3.25. Adding spinach and noodles raises it by about $0.40–0.60 per serving.
Some notes:
-You can totally customize these recipes however you want!
-Yes, the recipes take some time to cook, but very little active time. Most of it is just letting it simmer away!
-I like the balance of lean (chicken breast) and fattier (chuck) for a day of eating. This is a great way to get enough fat but not overdo it (especially if you are trying to lose weight)
-Both of these recipes also have a great amino acid balance with the muscle meat and bone broth
-These freeze very well! You could make both of these and freeze half, then have a weeks worth of meals for the future
-These are both one pot meals so cleanup is minimal
-If you don’t want to make this much, you can just cut both recipes in half!
Let me know if you have any questions!

One of the all-time great Rock Hall moments: Dolly’s “Jolene” with Rob Halford (Judas Priest), Pat Benatar, Annie Lennox, Simon Le Bon (Duran Duran), Pink, and Sheryl Crow. Zac Brown Band held it down as the house band.
Rest easy, Dolly 🤘
Miley Cyrus & Dolly Parton singing I Will Always Love You x Wrecking Ball. Their last performance together and one of the greatest performances ever.
I'm sorry we never got a chance to meet, but getting this note from Dolly really had a an impact on me. She definitely didn't have to take the time to do it. Even for a kid who mostly listened to rap music, she was an icon. A superstar in every sense. Rest easy Dolly. And thank you for the kind words.
The World Cup has turned America into a discovery channel for the rest of the world.
And they are not handling it well.
In the best possible way.

They finally understand why we do not have trains.
We have roads wide enough for the cars we actually drive.

My iPhone was hot, slow, and lagging on everything. I was already pricing out a new one.
A repair shop owner took it, swiped through four screens, and handed it back.
"Your phone is fine. Four settings are choking it. I see them every day."
Here is what he changed:
