I just went through Big Sur upgrade hell because of FileVault. I will say one thing, a post by @kkukshtel (https://t.co/c5Y4ygchoX) provided a fix that was ridiculously simple and would have worked. I was too far gone with EFI boot errors by the time I found it though.

Just delete the "Macintosh HD" and "Update" partitions and somehow magically your Data partition will be available. 🤯

DON'T try to remove the install folders in Single User Mode. That led to my EFI rabbit hole.
