But to your point, maybe the Italian Market on 9th street would be more in line with what I'm thinking.

I just find that Philly food is so often boiled down to cheesesteaks, and yeah, they are great (Angelo's ftw), but all those other things I mentioned are also quintessential Philly foods in my mind.
