🥛 You can drink a glass of milk without a second thought. Across most of the world, that is the unusual thing, not the normal one.
Every human baby can digest milk. That is what babies do. But in most of the human species, the body switches off the enzyme that breaks down lactose after weaning, because after childhood there is no more milk coming. That is the default setting for our species. Adults do not drink milk.
And then, a few thousand years ago, in populations keeping cattle in northern Europe, a change spread. The switch stopped flicking off. Adults kept the ability to digest milk their whole lives. Today it is found at some of the highest rates on earth in Scotland, Ireland and Scandinavia, while across much of Asia and Africa most adults cannot do it comfortably at all.
And it spread because it saved lives. Think about a Highland or island township. A poor spring, the grain gone, the fishing bad. But the cow is alive, and the cow gives milk every day. Milk was calories, protein, fat, calcium, and in a country of low winter sun, calcium mattered enormously. The family that could drink it in the hungry months was the family whose children lived.
That is why the cow sits at the heart of Highland life, why cattle raiding was the central act of clan warfare, and why the loss of the beasts in a bad year could end a family line. It was never really about cattle. It was about the only thing standing between a child and starvation.
So when you pour milk into your tea without thinking, you are using a piece of biology that was written into your ancestors by hunger.
