Hi Ron, some people believe that all true knowledge comes from experience. Peel and boil a few Maris Piper potatoes. Mash them in a ricer or with a fork. Divide the quantity into three and mix one, incorporating lumps of butter, while mixing the second amount with milk. Don't forget to season the spuds. Now taste. Better still, have a third dollop of potatoes to hand, into which you can combine both butter and milk.
