There is zero chance UFC would stand for any of their non-marquee fighters from speaking publicly in favour of unionizing without reprisal.

Violation of labour laws (ie. firing workers spearheading unionization) are routinely punished with slap on the wrist fines that are worth it in the long run to the employers.

Second, this isn’t retail. It’s highly skilled labour that not just any person can do. The more specialized labour, the higher the labour costs are. UFC pay is not in line.
