I make it with potatoes (sweet potatoes are my favorite), sausage, eggs, cottage cheese, cheddar cheese, and seasoned to taste. Bake at 350.

I didn't do it today but I often make one "pan" in muffin tins for an easier grab and heat option. That way I don't have to reheat an entire pan for a single serving.

We usually eat one the day I cook them. Then freeze the rest for a fast pop in the oven to reheat busy night meal.

So the weather didn't cooperate with my plans for today. But I took advantage and used the time to meal prep. My family loves breakfast casserole and it's a frequent go to meal. I make 4 of them at a time because thats all that will fit on my oven 😆.
