Cooking tips everyone should know:
- Put dry spices in oil for 30–60 seconds before adding other ingredients. It releases their essential oils and makes the flavour much richer.
-If the fresh garlic you’re starting your meal with burns, start over. Burnt garlic turns bitter and can affect the entire dish.
- Dry raw chicken or fish with paper towels before seasoning and pan frying or grilling, so that you’ll get a much better taste and crust.
- If your stew tastes flat, add a tiny squeeze of lemon or a splash of vinegar. A little acidity brightens the flavours without making it taste sour. (Tiny portion)
