They are not enjoying the liberty and infact they are under constant pressure from greek state. For example according to lausanne treaty they are entitled to elect their own mufti but you dont let them do it do u?

On the other hand, every 3, 5, or 7 years, they would take a certain number of male children from Christian villages, raise them as Muslims, and use them in state affairs as soldiers or in other ways. These children are called devshirme and this practice was in use until the beginning of the 18th century
Furthermore, when there was an uprising against the Ottomans, they would plunder the village, kill the strong men, and sell the women and children into slavery (as they did in Chios).
These are the main practices of the Ottomans against non-Muslims. Forcing them to convert to Islam or change their language is not what they really want. Of course, there may be some exceptions, but this is not their preferred general practice.
