Several great techniques to learn here. First, he pounded the chicken breast so it is even thickness throughout, so it will cook evenly. Then he dipped it in flour so that the egg mix will stick to the surface. A lot of cooks would go back into the flower, but he didn’t and just went right to a shallow oil fry. Yet he still got a nice crust because the Parmesan cheese. Then he took the chicken out and added broth and starch to thicken and made a pan sauce. Then the chicken went back in long enough to warm it, but not to cook it. Beautifully done.
