MARTIN COUNTY LANDS STAR FORWARD AIDEN BARKER
Martin County has added one of the area’s premier forwards with the addition of @AidenBa34882433 for the 2026-27 season.
Barker began his high school career at Elliott County before appearing in 12 games last season at Morgan County. Now, he’ll suit up for the Martin County Cardinals in what will be his senior campaign, giving the Cardinals another major piece as they chase a trip to Rupp Arena next March.
This is a huge addition for Head Coach Jason James and the Cardinals. Barker brings size, scoring ability, efficiency, and experience, providing exactly the type of impact player Martin County needed heading into the season.
A two-time D&D Sports Network All-Star Game MVP, Barker has established himself as one of the region’s top talents and will immediately be expected to make a significant impact on both ends of the floor.

Classic Cod Blanquette
Ingredients
800 g (1.7 lbs) cod fillets, cut into large chunks 🐟
3 carrots, thinly sliced 🥕
200 g (7 oz) button mushrooms, sliced 🍄
1 onion, finely chopped
1 garlic clove, minced
25 cl (1 cup) fish stock
20 cl (¾ cup) heavy cream
2 egg yolks
30 g (2 tbsp) butter
1 tbsp olive oil
1 tbsp all-purpose flour
Salt and freshly ground pepper
Fresh parsley, finely chopped 🌿
🍽️ Step-by-Step Preparation
1️⃣ Prepare the vegetables 🥕🍄
Start by preparing all the vegetables.
Peel the carrots and slice them into thin, even rounds so they cook uniformly.
Slice the mushrooms and finely chop the onion.
In a Dutch oven or large saucepan, heat the butter and olive oil over medium heat.
Add the onion, mushrooms, and carrots and sauté for 5 to 7 minutes.
The vegetables should soften slightly without browning—this keeps the blanquette light in color and delicate in flavor.
2️⃣ Cook the cod gently 🐟
Sprinkle the vegetables with the flour and stir well to coat—this will naturally thicken the sauce.
Pour in the fish stock, stirring to avoid lumps.
Add the minced garlic, a pinch of salt, and some black pepper.
Carefully place the cod pieces in the pan, nestling them between the vegetables.
Cover and simmer on low heat for about 15 minutes.
Do not stir too much—the cod is delicate and should remain in large flakes.
Once cooked, gently remove the cod and vegetables and keep them warm while you prepare the sauce.
3️⃣ Make the silky cream sauce 🍲
In a bowl, whisk together the heavy cream and egg yolks until fully combined.
With the pan off the heat (or on very low heat), slowly pour the cream mixture into the cooking liquid while whisking continuously.
The sauce will gradually thicken into a smooth, velvety texture.
⚠️ Important: Do not let it boil, or the yolks may curdle.
Taste and adjust seasoning with more salt or pepper.
4️⃣ Assemble and finish ✨
Return the cod and vegetables to the pot and spoon the sauce carefully over them.
Warm everything together for 2 minutes, without boiling.
Sprinkle freshly chopped parsley before serving.
