This is the Porchetta I roasted last night!Pork belly seasoned with a lovely aromatic filling of lemon, garlic, crushed fennel seeds, thyme, rosemary and chilli.Into the oven or Aga for 40mins, then it goes low and slow for 21/2 -3hrs hrs.
