The attention to detail in Dark Souls 2 is next level, and I wish Fromsoft would bring this back.
Fume Knight enrages and enters phase 2 immediately if you wear Velstadt's helm into the boss fight. Because he hated Velstadt. It's a fun way to meld lore and mechanics.

After the more developed transformations introduced in The Old Hunters, it's a little disappointing Dark Souls III only had the regular dragon form and Elden Ring didn't have anything. Maybe there's still hope for the eventual Elden Ring DLC.
