My Theory is that Bryan wasn't infected by the standard T-Virus which just rots your brain and turns you into a mindless meat-eater, but he was infected by the G-Virus which actively rewrites your entire genetic code to force a hyper-aggressive evolutionary upgrade.

This genetic rewrite explains why Bryan's mutation looks different from the others and he can still maintain fragments of his actual sanity and scream for help while his nervous system is actively being hijacked by the infection.
