I look forward to smoking our turkey every Thanksgiving. I brine overnight using an apple cider based brine. I smoke ours at about 225-250 degrees using real lump charcoal (no chemicals or filler) and mesquite on the Big Green to an internal temperature of 150 degrees. Let rest for 20 minutes. Always a massive hit!
