My wife was diagnosed with type 1 diabetes 4 years ago and has a very limited diet.

I make her Caesar salad dressing from scratch and smoked chicken breast that she dices up and mixes in with the salads.

For the past 6 months, her only meal every day is a large salad, and perhaps a few bites of pretzel or a cookie if her glucose gets low.

I would have been sick of the salads long ago, but she absolutely loves them.

She's eating one as I type this.

In the past I've made a number of chicken, beef and fish dishes that she loves and that keep her blood glucose in check, but for now she's enjoying the salad every day.
