Look at a beautiful mackerel that has been caught and prepared for you; handed out by the supermarket: you’ve got this thing; it’s a living being that’s died to give you life. The best thing you can do for it is to prepare it royally, and you should brood over your stove with an act of love and see that it’s exactly right.
