It looks to be a four-alarm in progress, and there's not a firefighter in sight. But someone's entering the building .... and someone else is coming out .... slowly, calmly .... carrying a bag.
A bag of barbecue, the best around. Some say the best in all of Texas, or at least the world. Local firefighters have actually been summoned here by concerned passersby who didn't realize that the restaurant was not afire, it just looked that way. The smoke belches from two big 'ol soot-blackened barbecue pits, tended by one big ol' soot-covered man, who really should be wearing an OSHA-mandated, oxygen-equipped gas mask if ever one was needed for any joy, anywhere. Instead he sits there in his baseball cap and bib overalls on a folding chair that he's pulled up real close so he can work the damper, feed the wood fire, and tend the meats. Holding his job looks to be the rough equivalent of a ten-packs-a-day habit.
Says his name is Howard, that he's been sitting there daily for about twenty years and doesn't really mind the smoke. And, after all, he basks in a perpetual baptism of what many around here call "the holy smoke," a divine ambrosial incense that flavors the heavenly ribs, brisket, chicken, links, and Howard, although he says no one has ever tried to sneak up on him with a knife and fork."
----- Bill Geist describes the New Zion Missionary Baptist Church Barbecue joint in Huntsville in "Way Off the Road: Discovering the Peculiar Charms of Small-Town America," 2007. Written in Geist's jocular style, it's a very entertaining travelogue. The photo shows the place as it looked to me in 2011. Per Yelp, the restaurant has closed ---- but it may not be permanent. I certainly hope it re-opens. The ribs were great!
