@DocAnj Hey Anjali, that carbon steel is a little easier to get back to sharp and will patina over time. AEB-L isn’t bad to sharpen either though, and remains shiny. Care is similar so largely comes down to aesthetics—would you choose and old farmhouse w character, or a new shiny place?
